 Ho pubblicato altri libri, ma avverto chiara la diversità di questo “Manuale dello Chef” : un’opera che vuole aiutare chi ha la passione, la curiosità e l’amore per il cibo e la cucina.

Cuoco, ristoratore, artista, creativo, divulgatore e anche scrittore, non bastano mai gli aggettivi quando si parla di Claudio Sadler riconosciuto e stimato dai altri cuochi di altissimo livello che lo hanno avuto come riferimento per il proprio percorso.  Claudio Sadler ha voluto non solo mettere in gioco le sue ricette come terreno di sfida per chi volesse cimentarvisi ma ha pensato di iniziare dalle basi della cucina. Il libro affronta il tema dell’arte culinaria partendo dai rudimenti in modo da far comprendere l’importanza di ogni minimo particolare, anche il più banale in apparenza eppure essenziale come il fatto di saper allestire una tavola per i propri commensali.

Claudio Sadler può vantare un’esperienza più che decennale, volta sempre alla ricerca della perfezione nelle proprie ricette, tuttavia gli va riconosciuto il pregio di sapersi calare nei panni dell’ottimo maestro che cerca di istruire gli appassionati di cucina a raggiungere obbiettivi lodevoli, attraverso piccoli accorgimenti che vanno dalla consueta spesa quotidiana dei prodotti alimentari fino alla scelta dell’utensile giusto per la preparazione. Dalle tecniche di taglio e conservazione dei singoli prodotti ai procedimenti di cottura, dalle preparazioni di base alle ricette della tradizione suddivise per genere e descritte puntualmente; fino alla rivisitazione in chiave personalizzata dallo stesso Sadler, di preparazioni di base e ricette celebri e di tutti i giorni.  In questo “manuale del cucinar bene” Sadler veste bene i panni del maestro, dedito ad erudire  gli aspiranti chef definendo ogni minimo dettaglio nelle preparazioni. Dalle diverse tecniche di cottura si passa a quella che lui definisce nel capitolo “cucina per tutti” che comprende la pasta, il riso e i vari cereali fino a illustrare la preparazione delle salse fondamentali e i vari impasti per fritture e impanature.

La seconda parte del Manuale è costituita dal ricettario con le oltre 60 preparazioni da lui appositamente ideate, che vi consiglio di provare con molta cautela e attenzione poiché il risultato le prime volte non potrebbe essere quello che ci si aspetta! Ma mai darsi per vinto…

«La mia idea è stata quella di portare a conoscenza della gente le materie prime, le tecniche, l’uso degli strumenti e del calore, in maniera semplice e comprensibile. Quello che ho immaginato è stato di dare a tutti la possibilità e le informazioni per riuscire in cucina e compiere un gesto d’amore verso i propri commensali».

Seguono consigli per il servizio, la tavola e la presentazione dei piatti, ricette per la cena elegante, il pranzo in piedi, il brunch o l’aperitivo e i migliori abbinamenti con il vino.

L’ultima parte del manuale è dedicata alla preparazione di un menù per le più varie occasioni, equilibrando le portate in maniera equilibrata in qualsiasi occasione. Interessante il capitolo off-topic  in cui Sadler simula un backstage per far entrare l’aspirante chef nel mondo della cucina stellata: qui vengono illustrate le sue attività di organizzatore, fine intenditore di ingredienti e maestro nella scelta degli accostamenti fra un piatto e l’altro. Il contenuto è molto scorrevole e l’impressione che si ha di Sadler è quella di uno chef che si esprime con la massima umanità e disponibilità verso chi abbia voglia di imparare, offrendo al lettore la possibilità di apprezzare l’esperienza di preparare qualcosa con le proprie mani per sé e per gli altri. Indubbiamente un libro dal gusto gioioso che ci invoglia a provare ad essere chef, almeno per una volta.

Chef, restaurateur, artist, creative, adviser and also a writer, never enough adjectives when it comes to Claudio Sadler recognized and respected by the other chefs at the highest level that they had as a reference for your own path.  Claudio Sadler wanted not only to to stake his recipes as ground of challenge for those who want to do their thing but has decided to start from the basics of cooking. The book deals with the theme of the culinary arts starting from the basics so as to understand the importance of every detail, even the most trivial in appearance yet as essential as the fact of being able to set up a table for their guests. Claudio Sadler can boast over ten years experience, time always looking for perfection in their recipes, however, must be acknowledged the merit to be able to step into the shoes of the excellent teacher who seeks to educate food lovers to achieve laudable goals, through small steps ranging from the usual daily expenditure of food up to the choice the right tool for the preparation.  From cutting techniques and conservation of individual products to cooking processes, the preparations according to traditional recipes broken down by gender and described on time, until the reinterpretation customized by the same Sadler, of basic preparations and recipes of famous and everyday.   This “manual cucinar well,” Sadler as well the role of the teacher, dedicated to erudite aspiring chefs defining every detail in the preparations. From the various cooking techniques you switch to what he calls the chapter “kitchen for all” which includes pasta, rice and various cereals to illustrate the preparation of sauces and various basic dough for frying and breading. The second part of the manual consists of the cookbook with over 60 preparations specially designed by him, which I recommend you try with great caution and care as the result of the first few times might not be what you expect! But never giving up …

“My idea was to bring to the attention of the people raw materials, the techniques, the use of instruments and heat, in a simple and understandable. What I imagined was to give everyone a chance to succeed and the information in the kitchen and make a gesture of love towards their guests.

Here are tips for the service, the food and the presentation of the dishes, recipes for elegant dinner, lunch standing, the brunch or cocktails and the best pairings with wine. The last part of the book is devoted to preparing a menu for a variety of occasions, balancing the flow in a balanced manner in any occasion.  Interestingly, off-topic section where Sadler simulates a backstage to let the aspiring chef in the world Starry Kitchen: here describes its activities as an organizer, fine connoisseur of ingredients and teacher in the choice of the matching between a plate and the other.  Content is very smooth and the impression you get of Sadler is that of a chef which is expressed with the utmost humanity and availability to those who wish to learn, offering readers the chance to enjoy the experience of preparing something with their own hands to themselves and others.  Undoubtedly a book that makes you want to taste joyful try to be chef, at least for a time.
