With an elevation of 4,810 meters\/15,771 feet, it is the highest mountain in the Alps. Known for its white peaks and the resort towns of Courmayeur and Chamonix, Monte Bianco holds another, somewhat unexpected, treasure\u2026 vineyards.<\/em><\/span><\/h2>\n\n\n\n<p><span style=\"color: #000000;\">Here at the foot of the mountain, at the end of the <strong>Valle d&#8217;Aosta<\/strong>, lie the highest vineyards in Europe, <strong>the Pri\u00e9 Blanc<\/strong>. At these <a href=\"https:\/\/cucineditalia.com\/en\/valle-daosta-summer-wine-grosjean\/\" target=\"_blank\" rel=\"noreferrer noopener\">high altitudes the grapes<\/a> are cultivated along the lowest slopes so as to protect the fruit from the biting cold and take advantage of the warmer temperatures of the soil. Since 1983 <strong>Cave Mont Blanc<\/strong> has been on these slopes producing the only classic spumante certified denominazione di origine from these vineyards.<\/span><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><a href=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2016\/01\/144701-IMG_8834.jpg\"><img decoding=\"async\" data-src=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2016\/01\/144701-IMG_8834.jpg\" alt=\"cave mont blanc\" class=\"wp-image-19475 lazyload\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 600px; --smush-placeholder-aspect-ratio: 600\/400;\" \/><\/a><\/figure>\n<\/div>\n\n\n<p><\/p>\n\n\n\n<p><span style=\"color: #000000;\">The vineyards of the<strong> Pri\u00e9 Blanc<\/strong> are meticulously cared for by about eighty owners who work an area which reaches up to <strong>1200 meters<\/strong> above sea level and extends the length of a zone called the <strong>Dora Baltea<\/strong>, near the towns of <strong>Morgex and La Salle<\/strong>.<\/span><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><a href=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2016\/01\/Cave-Morgex-jpeg_1677.jpg\"><img decoding=\"async\" data-src=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2016\/01\/Cave-Morgex-jpeg_1677.jpg\" alt=\"cave mont blanc\" class=\"wp-image-19477 lazyload\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 600px; --smush-placeholder-aspect-ratio: 600\/425;\" \/><\/a><\/figure>\n<\/div>\n\n\n<p><\/p>\n\n\n\n<p><span style=\"color: #000000;\">For the past ten years Cave Mont Blanc has been collaborating with local guides from Courmayeur to specialize in the production of spumante created with grapes from these high altitudes, and in 2009 they succeeded in bottling their very first <strong>Blanc de Morgex et de La Salle Metodo Classico Extrabrut \u201cCuv\u00e9e des Guides.\u201d<\/strong> <\/span><\/p>\n\n\n\n<p><span style=\"color: #000000;\">The first bottles of this unique sparkling wine were made exclusively in one area, the <strong>Monzino<\/strong>, however overtime the winery has made use of Monte Bianco&#8217;s cable car system and expanded the production area to include another, the Pavillon, at an altitude of <strong>2173 meters.<\/strong> Here, the grapes undergo the process of tirage when the cuv\u00e9\u00e8 is selected and the sugar and yeast are added. After a period of twenty-four months comes the d\u00e9gorgement when the frozen sediment is removed. The unique combination of altitude, atmospheric pressure, temperature and careful work make for a <strong>singular and excellent spumante.<\/strong><\/span><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><a href=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2016\/01\/Cave-Morgex-jpeg_1686.jpg\"><img decoding=\"async\" data-src=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2016\/01\/Cave-Morgex-jpeg_1686.jpg\" alt=\"cave mont blanc\" class=\"wp-image-19479 lazyload\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 600px; --smush-placeholder-aspect-ratio: 600\/352;\" \/><\/a><\/figure>\n<\/div>\n\n\n<p><span style=\"color: #000000;\">Another notable producer of Cave Mont Blanc is <strong>Vall\u00e9e d&#8217;Aosta D.O.C. Blanc de Morgex et de La Salle<\/strong>, made exclusively with the grape variety from the Morgex vineyards of Pri\u00e9 Blanc. <strong>Chaudlune<\/strong> also produces a worthy and diverse Cave Mont Blanc, harvesting on the coldest nights. At these cold temperatures the water inside the grapes freezes while leaving the sugar a liquid. The fruit is immediately pressed and the liquid sugar can be totally extracted while the frozen part remains in the press allowing for a more concentrated <em>mosto<\/em> or must.<\/span><\/p>\n\n\n\n<p><span style=\"color: #000000;\">With its floral and light tropical fruit aromas Cave Mont Blanc <strong>pairs perfectly with fish and shellfish<\/strong>.
