So often we focus on which food<\/span><span lang=\"en-US\">s<\/span><span lang=\"en-US\"> match with which wines and why and of course, this is key to knowing how to select the right wine to serve with a particular food. <\/span><\/p>\n<p style=\"text-align: justify;\"><span lang=\"en-US\">Yet, equally as important is knowing which foods not to pair with certain wines or which foods really don&#8217;t lend themselves to being served with wine in general. In this second article of the series, <\/span><span lang=\"en-US\"><b>Cucine d&#8217;Italia<\/b><\/span><span lang=\"en-US\"> will focus, not on the ideal pairings that create a harmony of flavors as the previous article <\/span><span lang=\"en-US\">did,<\/span><span lang=\"en-US\"> but on the <\/span><span lang=\"en-US\"><b><em>impossible<\/em> pairings<\/b><\/span><span lang=\"en-US\"> or rather understanding which foods <\/span><span lang=\"en-US\">to <\/span><span lang=\"en-US\">look out for<\/span><span lang=\"en-US\"> when choosing a wine to accompany a meal<\/span><span lang=\"en-US\">. <\/span><\/p>\n<p style=\"text-align: justify;\"><span lang=\"en-US\">The foods which fall into this category <\/span><span lang=\"en-US\">of &#8216;impossible foods&#8217;<\/span><span lang=\"en-US\"> have in one form or another characteristics which make <\/span><span lang=\"en-US\">it<\/span> <span lang=\"en-US\">highly difficult<\/span><span lang=\"en-US\"> to bring out the best flavors in wines. When these foods are paired with wine they are actually capable of altering the <\/span><span lang=\"en-US\">flavor<\/span><span lang=\"en-US\"> and can negatively impact the <\/span><span lang=\"en-US\">taste <\/span><span lang=\"en-US\">of a wine making it <\/span><span lang=\"en-US\">unbalanced and even <\/span><span lang=\"en-US\">unpleas<\/span><span lang=\"en-US\">ant<\/span><span lang=\"en-US\">.<\/span><\/p>\n<p style=\"text-align: justify;\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-27682 lazyload\" data-src=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2016\/07\/abbinamenti-impossibili-1.jpg\" alt=\"abbinamenti impossibili \" width=\"800\" height=\"600\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 800px; --smush-placeholder-aspect-ratio: 800\/600;\" \/><\/p>\n<h3>Food Meets Wine<\/h3>\n<p style=\"text-align: justify;\"><span lang=\"en-US\">One general rule of thumb when deciding if a particular <\/span><span lang=\"en-US\">dish<\/span><span lang=\"en-US\"> should or shouldn&#8217;t be paired with a wine is the predominance of a food that is strongly acidic, as is the case with <\/span><span lang=\"en-US\"><b>lemons<\/b><\/span><span lang=\"en-US\"> and <\/span><span lang=\"en-US\"><b>vinegar<\/b><\/span><span lang=\"en-US\">. These strong acidic properties dominate over the softer flavors of the wine. Pickled foods are another example of a strongly acidic food that doesn&#8217;t pair well with most wines.<\/span><span lang=\"en-US\"> So hold back on serving any sort of pickled vegetable as a nibble alongside a nice glass of prosecco.<\/span><\/p>\n<p style=\"text-align: justify;\"><span lang=\"en-US\">A<\/span><span lang=\"en-US\">nother pairing to watch out for is matching wine with a food that has a bitter or metallic taste. When served together they create an unpleasant flavor which lingers on the palate. Foods which fal<\/span><span lang=\"en-US\">l<\/span><span lang=\"en-US\"> into this category are: <\/span><span lang=\"en-US\"><b>raw artichokes<\/b><\/span><span lang=\"en-US\">, <\/span><span lang=\"en-US\"><b>raw spinach<\/b><\/span><span lang=\"en-US\">, <\/span><span lang=\"en-US\"><b>roe<\/b><\/span><span lang=\"en-US\"> and<\/span><span lang=\"en-US\"><b> bitter chocolate<\/b><\/span><span lang=\"en-US\">. <\/span><span lang=\"en-US\">If you want to serve wine with these foods make sure that the artichokes and spinach are cooked and that the roe or chocolate are only present in small quantities as a final touch to a dish. <\/span><\/p>\n<p style=\"text-align: justify;\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-27684 lazyload\" data-src=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2016\/07\/abbinamenti-impossibili-2.jpg\" alt=\"abbinamenti impossibili \" width=\"800\" height=\"600\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 800px; --smush-placeholder-aspect-ratio: 800\/600;\" \/><\/p>\n<p style=\"text-align: justify;\"><span lang=\"en-US\">Remember <\/span><span lang=\"en-US\">as well when eating <\/span><span lang=\"en-US\"><b>ice cream<\/b><\/span><span lang=\"en-US\"> and other cold foods that the low temperatures of the food make it more difficult for our taste buds to sense the various flavors in the wine. Also, foods which contain liquors and spirits can be tricky to pair with a wine as are dishes that have <\/span><span lang=\"en-US\"><b>grapes<\/b><\/span><span lang=\"en-US\">, <\/span><span lang=\"en-US\"><b>citrus<\/b><\/span><span lang=\"en-US\"> fruits or<\/span><span lang=\"en-US\"><b> fresh figs<\/b><\/span><span lang=\"en-US\"> as an ingredient. <\/span><span lang=\"en-US\">If, however, these foods are <\/span><span lang=\"en-US\">only barely there ingredients<\/span> <span lang=\"en-US\">used in small quantities or as a garnish<\/span> <span lang=\"en-US\">to<\/span><span lang=\"en-US\"> a dish then no need to worry or avoid wine.
