{"id":22541,"date":"2021-08-14T11:42:54","date_gmt":"2021-08-14T11:42:54","guid":{"rendered":"https:\/\/cucineditalia.com\/?p=22541"},"modified":"2022-05-24T15:06:57","modified_gmt":"2022-05-24T15:06:57","slug":"re-befes-volcanic-sparkling-wines","status":"publish","type":"post","link":"https:\/\/cucineditalia.com\/en\/re-befes-volcanic-sparkling-wines\/","title":{"rendered":"Re Bef\u00e9&#8217;s Volcanic Sparkling Wines"},"content":{"rendered":"\n<p>The <strong>Sicilian<\/strong> winery <span class=\"has-inline-color has-vivid-red-color\">Al Cant\u00e0ra<\/span> makes its debut into the world of bubbles with its <em>elegant<\/em> <strong>Re Bef\u00e8<\/strong>, an Extra Brut Etna Bianco DOC produced using the classic method and aged for four years.<\/p>\n\n\n\n<p>Made with <strong>Nerello Mascalese<\/strong> grapes which are harvested at the first light of dawn, Re Bef\u00e8 is the result of five years of research and experimentation.\u00a0\u00a0Its name comes from a popular Sicilian <em>nursery rhyme<\/em> that begins, \u201cC\u2019era \u2018na re, Bef\u00e8, visoctta e min\u00e8\u2026.\u201d &#8211; the fable, written in Sicilian dialect, of a king who tries to find his daughter\u2019s pet bird who has flown away.\u00a0\u00a0The literary connection between the wine and the fairytale is the perfect reflection of the winery\u2019s producer Pucci Giuffrida, whose passion for literature and his own collection of poems dedicated to works by Sicilian writers and playwrights has earned him the nickname of \u2018literary vigneron.\u2019<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"768\" data-src=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2021\/08\/Al-Cantara-Re-Befe-Spumante-Extra-Brut-Etna-Bianco-DOC-1024x768.jpg\" alt=\"Al-Cant\u00e0ra Re Bef\u00e8 Spumante Extra Brut Etna Bianco DOC\" class=\"wp-image-22323 lazyload\" data-srcset=\"https:\/\/cucineditalia.com\/wp-content\/uploads\/2021\/08\/Al-Cantara-Re-Befe-Spumante-Extra-Brut-Etna-Bianco-DOC-1024x768.jpg 1024w, https:\/\/cucineditalia.com\/wp-content\/uploads\/2021\/08\/Al-Cantara-Re-Befe-Spumante-Extra-Brut-Etna-Bianco-DOC-300x225.jpg 300w, https:\/\/cucineditalia.com\/wp-content\/uploads\/2021\/08\/Al-Cantara-Re-Befe-Spumante-Extra-Brut-Etna-Bianco-DOC-768x576.jpg 768w, https:\/\/cucineditalia.com\/wp-content\/uploads\/2021\/08\/Al-Cantara-Re-Befe-Spumante-Extra-Brut-Etna-Bianco-DOC-696x522.jpg 696w, https:\/\/cucineditalia.com\/wp-content\/uploads\/2021\/08\/Al-Cantara-Re-Befe-Spumante-Extra-Brut-Etna-Bianco-DOC.jpg 1134w\" data-sizes=\"(max-width: 1024px) 100vw, 1024px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 1024px; --smush-placeholder-aspect-ratio: 1024\/768;\" \/><\/figure>\n\n\n\n<p>The tale of this <strong>sparkling<\/strong> wine begins far away, on the slopes of a volcano, at dawn on the last days of summer when the grapes are carefully selected and hand-harvested.\u00a0\u00a0\u201cTo make excellent sparkling wines and champagnes, I have learned two basic requirements are needed:\u00a0\u00a0high total acidity and low pH,\u201d remarks Giuffrida, \u201cTwo elements that Nerello Mascalese naturally possesses.\u00a0\u00a0Hence the curiosity to push the potentialities of the vine, to make it evolve in the cellar into a sparkling wine that expresses the best of these autochthonous grapes that are so versatile and generous.\u201d<\/p>\n\n\n\n<p>In fact, Nerello Mascalese is a grape that has demonstrated itself to be an extraordinary example fo biodiversity and adaptability; and it is, therefore, no wonder that Al-Cant\u00e0ra has used it in the production of eight different products for its winery and distillery:\u00a0\u00a0Rosso Etna Doc (Lu veru piaciri), Rosso IGP (Muddichi di suli) and Rosso CRU, a reserve aged in chestnut wood (O Scuru O Scuru); ros\u00e9 (Amuri di Fimmina); blanc de noir (A Nutturna); passito (U Dis\u00ecu); grappa (Rosa Fresca Aulentissima) and now spumante extra brut Etna Doc Bianco Re Bef\u00e8.<\/p>\n\n\n\n<p>\u201cIt is a <strong>sparkling<\/strong> wine that is son of the volcano,\u201d explains Manlio Giustiniani, teacher at Fondazione Italiana Sommelier and Bibenda Master Class.\u00a0\u00a0\u201cTo the taste, it is elegant with a creamy carbonic acidity, nice freshness, and a pleasant hint of iron with a mineral finish of flint, and good persistence.
