Antonella Martinelli – nota autrice Rai – aveva scovato nella propria soffitta un libro di dolci, un ricettario scritto a mano dalla nonna che pazientemente aveva ricopiato le ricetta dal Credenziere di buon gusto di Vincenzo Corrado.

Per chi non conoscesse Vincenzo Corrado ecco un suo breve profilo:

Originario della Puglia, di Oria, fu cuoco, filosofo e letterato italiano, oltre ad essere considerato personaggio di grande cultura, e soprattutto eccellente  gastronomo, capacità per la quale divenneIl credenziere di buon gusto simbolo del suo tempo nella variegata realtà napoletana tra il ‘700 e l’800 nelle corti nobiliari. Era il 1773 quando scrisse “Il cuoco galante”, definito all’epoca un libro di alta cucina – scritto e ristampato per ordini del principe per ben 6 volte –. Una sorta di best-seller dell’epoca che venne richiesto in tutto il mondo, da altissime autorità e nobili dell’epoca. Nel 1778 il Principe spinse l’autore a pubblicare un “Credenziere del buon gusto, del bello del soave e del dilettevole per soddisfare gli uomini di sapere e di gusto e fu un altro successo. Una nota di merito per  Corrado fu inoltre il fatto di essere stato il primo cuoco che mise per iscritto la “cucina mediterranea” ed il primo, a valorizzare la grande cucina regionale italiana.Preparava elegantissimi banchetti alla corte dei nobili di Napoli, coordinando un gruppo nutrito di maggiordomi, domestici, volanti e paggi che interveniva nel grande servizio di cucina, preparava i pranzi o le cene con particolare assortimento di vivande accoppiandole con tanta fantasia e particolari accorgimenti architettonici ed artistici al fine di formare una coreografia sontuosa e raffinata. Fu insomma uno dei primi cosiddetti Chef stellati!

La versione originale del manoscritto è riportata nella prima parte di Essenze di Felicità un ricettario che riesplora in chiave “moderna” delle antiche ricette di dolci, confetture, marmellate, spume e quant’altro  grazie all’abilità e alla competenza del giovane ma già espertissimo chef Alessandro Circiello.

Proprio parlando con Alessandro è sorta una domanda: ma è semplice poter eseguire questeessenze-COPERTINA preparazioni settecentesche?

La risposta è stata sì, poiché si tratta proprio di un testo che allora come oggi è dedicato al popolo, a chi si vuol cimentare con preparazioni semplici e senza tempo che soddisfano ogni palato in maniera sana, visti anche gli ingredienti di base.

E come mai proprio ad Alessandro l’arduo compito di tradurre il ricettario di Vincenzo Corrado?

Beh, lui non è semplicemente (semplicemente per modo di dire) chef stellato, ma soprattutto esperto di alimentazione e portavoce della figura del Cuoco come promotore di salute, per cui la risposta vien da sé. Chi altri avrebbe saputo meglio dare le dosi esatte per raggiungere i risultati di ricette in cui tutto era lasciato all’esperienza dei cuochi e delle massaie del tempo?

Affascina capire come secoli a dietro le ricette venissero concepite. Da una recente intervista ad Antonella Martinelli si legge:

«Quando ho trovato questo manoscritto nella soffitta del palazzo di famiglia ad Anagni, mi ha colpito per prima cosa la grafia talmente curata da evocare subito un’era in cui il tempo delle donne aveva un significato completamente diverso da oggi. Era il tempo della pazienza e della cura amorevole per sé e per gli altri».

Sappiate che tale colpisce sfogliando la prima parte del libro: quella del manoscritto!

In Essenze di Felicità vi sono ricette di naspri garofani o di viole, frutta caramellata, composte di frutta di varietà d’uso comune o meno nelle nostre cucine, gileppe di ginepro o di capelvenere e altre leccornie abbandonate dalla maggiorparte di noi che spesso siamo abituati a pensare che acquistare una marmellata confezionata sia un modo sbrigativo per donarsi un momento di dolcezza. Momento di dolcezza però incomparabile con quello di una stessa marmellata fatta in casa che… scoprirete… non è poi così complicata o proibitiva da fare, come dichiara lo stesso Alessandro Circiello!

Alessandro Circiello, esperto di cucina e sana alimentazione, da molti anni è impegnato in iniziative e campagne volte ad affermare il concetto di salute legato alla cucina. Presidente della Federazione Italiana Cuochi Lazio, collabora con il Ministero della Salute e ha curato numerose rubriche di cucina all’interno di programmi Rai quali “I Fatti Vostri”, “Mattina in Famiglia”, “Tg2 Costume e Società”. Attualmente ha una rubrica di cucina su “Tg2 Insieme” (Rai2) e su Radio1 Rai. Ha pubblicato La salute vien mangiando (Pubbliedi – Rai Eri, 2010) e Tutti a tavola la salute è servita (Rai Eri – Kowalski, 2011).

Alessandro Circiello is an expert in cooking and healthy eating, for many years engaged in initiatives and  campaigns to uphold the concept of health tied to the kitchen. President of the Italian Federation of Chefs Lazio, working with the Ministry of Health and has curated numerous sections of kitchen inside RAI programs such as “mind your own business”, “Morning in the Family”, “Tg2 Costume e Società”. Currently has a phonebook Cooking on “TG2 Together” (RAI-2) and on Radio1 Rai. He published The health comes from eating (Pubbliedi – Rai Eri, 2010) and Everyone at the table is served health (Rai ri – Kowalski, 2011).

Antonella Martinelli ha lavorato in Rai dal 1983.Lei è stato uno scrittore per diversi programmi televisivi, traAntonella Martinelli cui “Magazine3” e “Harem”, per il quale ha intervistato numerose grandi personalità del giornalismo, politici, e dello spettacolo. Dal 1995 ha scritto diversi programmi di RaiUno e, dal 1996, gli eventi in corso e commento sociale e il programma di analisi “Porta a Porta”.

Antonella Martinelli  has worked in Rai from 1983.Lei was a writer for several television programs, including that “Magazine3” and “Harem”, for which he interviewed many great  personalities of journalism, politics, and entertainment. Since 1995 he has written several programs for BBC ONE and, since 1996, current events and social commentary and analysis program “Porta a Porta”.

Antonella Martinelli – known author Rai – had found in his attic a book of cakes, a recipe handwritten by her grandmother who patiently had copied the recipe from Credenziere tasteful Vincenzo Corrado’s .

For those unfamiliar with Vincenzo Corrado here is a brief outline of his:

A native of Apulia, Oria, was cook, Italian philosopher and scholar, besides being considered person of great culture, and above all excellent gastronome, capacity for which he became a symbol of his time in the variegated reality of Naples between 700 and 800 in the noble courts.  was 1773 when he wrote “The cook gallant,” defined at the time a book of haute cuisine – written and reprinted for the prince’s orders for 6 times -. A sort of best-seller of the time that was in demand around the world, from high authority and noblemen. In 1778, the Prince pushed the author to publish a “Credenziere of good taste, beauty of sweet and delectable to meet the men of knowledge and taste and it was another success.  A note on Corrado was also the fact that he was the first chef to write down the “Mediterranean cuisine” and the first, to appreciate the great regional cuisine Italian. Brews elegant banquet of the nobles at the court of Naples, coordinating a large group of butlers, servants, flying and pages that intervened in the great service kitchen, preparing lunches or dinners with special assortment of food matching them up with lots of imagination and special precautions architectural and artistic in order to form a choreography sumptuous and refined. Short, it was one of the first so-called Acclaimed chefs!

The original version of the manuscript is given in the first part of Essenze di Felicità a cookbook that re-explores in a “modern” of the ancient recipes of cakes, jams, marmalades, mousses and so on thanks  to the skill  and expertise of the young but already an expert  chef Alessandro Circiello 

Just talking with Alessandro has arisen a question:  but it is simple to perform these preparations eighteenth century?

The answer was yes, because it is just a text that then as now, is dedicated to the people, to those who want to challenge themselves with preparations simple and timeless to suit all tastes in a healthy manner, given also the basic ingredients.

And why just to Alexander the arduous task of translating the recipe by Vincenzo Corrado?

Well, he is not simply (simply a manner of speaking) starred chef, but especially food expert and spokesperson of the figure of Cook as a promoter of health, so the answer comes by itself.Who else would know better to give exact doses to achieve the results of recipes in which everything was left to the experience of cooks and housewives of the time?

Fascinates understand how centuries behind the recipes were conceived.  A recent interview with Antonella Martinelli reads:

“When I found this manuscript in the attic of the family palace at Anagni, hit me first thing in the handwriting cured so as to evoke an era now in which time women had a completely different meaning today. It was the time of patience and loving care for themselves and for others. “

Know that this affects perusing the first part of the book: that of the manuscript!

In Essenze di Felicità , there are recipes naspri carnations or violets , candied fruit, stewed fruit varieties in common use in our kitchens or less, Gileppe juniper or maidenhair and other delicacies abandoned by most of us that we are often accustomed to think that buying one is jam packed a hasty way to give himself a moment of sweetness. Moment of sweetness, however, incomparable with that of the same homemade jam … you’ll discover that … is not that complicated or prohibitively expensive to do, as stated by Alexander himself Circiello!
