Omaggio a Thelonious Monk

Merluzzo in crosta carbonizzata di alghe e ricci di mare

su brodo katsebushi al nero con tonno essiccato

radici croccanti, zenzero candito piccante.

Dedicato al celebre musicista jazz, il piatto non è una new entry sul menu, ma è bellissimo e attualissimo come immagine e concept.

L’idea

il Jazz é una disciplina molto tecnica

ma soprattutto di grande improvvisazione sulla tecnica

da noi in cucina non ci puo’ essere improvvisazione sulla tecnica, però ci può essere improvvisazione su un’idea

con l’omaggio a Thelonious Monk

ho voluto cercare un piatto dove il cuoco spegne la luce

lascia tutti al buio

e fa vivere solo l’esperienza al palato

Le radici sono poste sulla base del piatto, sopra viene adagiato il merluzzo. Il tutto è ricoperto dal brodo al nero.

Tra le collezioni in passerella, KTZ è uno dei brand che mi ha più colpito ed è scattato subito il link con Bottura.

Sovrapposizioni

Tagli freschi su tutte le lunghezze,

stampe originali, velature,

ispirazioni orientali rivisitate

elementi coprenti e trasparenze.

Trovo che la filosofia dietro e dentro la creazione del piatto e quella di questi outfit siano decisamente allineate.

Tribute to Thelonious Monk

Cod in charred crust of algae and sea urchins

on katsebushi black broth with dried tuna

crunchy roots, spicy candied ginger .

Named after the famous jazz musician , the pot is not a new entry on the menu , the video is no longer on the pages of the site.

But it is beautiful! As for the image and the concept.

The idea

Jazz is a very technical discipline

 but especially of great improvisation on technique

by us in the kitchen there can’t be improvisation on technique,

however there may be improvisation on the idea.

With the tribute to Thelonious Monk

I wanted to find a dish where the chef turns out the light

leaves everyone in the dark

and brings to life just the experience on the palate

The roots are placed on the base, then the cod. The black broth covers all.

Among the collections on the catwalk, KTZ is one of the brands that impressed me most and I found immediately a link with Bottura .
