The capers are to be thoroughly rinsed under running water to completely remove the salt. After drying them well, they are arranged on a baking sheet and dehydrated in the oven at 100°C (212°F) until completely dry and crumbly. The peaches are washed (keeping the skin if desired) and cut into regular cubes. Once transferred to a bowl, they are seasoned with a drizzle of extra virgin olive oil, a pinch of salt, a splash of rice vinegar, and a few fresh thyme leaves.
