Acetaie Aperte, the annual promotion and outreach event jointly organized by the two consortia for the protection of Balsamic Vinegar of Modena PGI and Traditional Balsamic Vinegar of Modena PDO, is back with the aim of bringing food lovers and everyone interested in learning about the secrets of the prized condiment right where it originates.
The date to mark on the calendar for the 2022 edition is Sunday, September 25th, in more than 30 vinegar factories in the province of Modena that produce Balsamic Vinegar of Modena PGI and Traditional Balsamic Vinegar of Modena PDO, and the format – compared to previous editions – is the same: guided tours and tastings directly in the places of production are confirmed.
An all-round sensory journey that aims to involve enthusiasts and the curious to discover the qualitative and distinctive elements of the two products, but also the individual stories told by the different producers, each with their own roots and characteristics.
An Event to Explore Balsamic Vinegar
Acetaie Aperte is an indispensable showcase for producers, because thanks to this day many people come closer to learn more about Balsamic Vinegar of Modena IPG and Traditional Balsamic Vinegar of Modena PDO and build a real “culture,” learning how to distinguish and use them in everyday life, and equipping themselves with the right tools to recognize authentic products from imitations.
The event will include visits to the vinegar cellars and tastings, but also many other collateral initiatives organized in the individual vinegar cellars that, are being organized to offer all-round experiences, both indoor and outdoor.
Along the way, explanations of the production chain are planned, starting with a visit to the vineyard where the grapes destined for Balsamic are grown and then moving inside the facilities with the boiling room, must storage room, barrique cellar and aging room. There will also be evocative tours of the area’s museums dedicated to Balsamic, with theatrical narratives by “historical” characters that will involve the public present with original animations.
Outdoors, there will be visits and walks to the botanical garden with panoramic views of the Panaro Valley, Cimone and the Pre-Alps, cooking of must in outdoor cauldrons, visits to the educational farm or animal park, or even a grape harvest demonstration with the little ones.
