The property has in fact decided to focus on the food and wine excellence of its restaurant Il Pievano, one Michelin Star, and new and exclusive beauty paths within the wellness center and the charming infinity pool overlooking the vineyards.

Castle of Spaltenna: The Pievano Restaurant

Castello di Spaltenna’s 1 Michelin-starred restaurant, Il Pievano, showcases the cuisine of chef Stelios Sakalis (pupil of Gordon Ramsay), the face of the new generation of Italian chefs. His proposal includes three tasting menus: Mrs Jekyll, Dr Jekyll and the blind menu Mr Hyde.

A constantly evolving cuisine, more and more “funky, rock and with a lot of technique”: this is how chef Stelios likes to define his gastronomic proposal. The search for raw material is becoming more and more important so much so that the chef has started interesting collaborations with Chianti producers in the sign of “territorial sustainability.”

There is also a focus on the restaurant’s wine cellar, which offers 750 labels, in addition to Chianti Classico and Riserva produced from the Castle’s vineyards. A rich proposal that ranges from the Chianti territory to Italy to the rest of the world.

Spaltenna Castle: La Pieve Spa and the Infinity Pool

La Pieve Spa, overlooking the Tuscan countryside, features a Finnish sauna, Turkish bath, tepidarium, experience showers, an indoor heated pool with large windows that frame the beauty of this breathtaking landscape.

An outdoor pool built overflowing onto the vineyards surrounding the property, Infinity Pool overlooks a breathtaking panorama and recalls the castle’s architectural south elevation, complete with towers, which are reflected in the water, while two flights of stairs placed to the side facilitate access to the water.

Surrounded by the silence of the park, vines, olive trees and cypress trees, the new infinity pool offers a new way to enjoy the Chianti landscape. On chaise lounges, deck chairs and umbrellas sunbathe until sunset, relax with a good book or simply rest away from it all.
