A New Culinary Era for the Hotel Cipriani in Venice

This year Hotel Cipriani, a Belmond collection, is set to reopen its doors for the 2022 season, ushering in a new culinary era. Starting on March 10th, the legendary Venetian retreat will see Executive Chef Riccardo Canella at the helm of its renowned Michelin-starred Ristorante Oro.

Oro is the epitome of the classic charm of Venetian style. Designed by famed interior architect Adam D. Tihany, Oro takes its name from the stupendous gold-leaf details that adorn its ceiling, playing off of the beauty of the Murano chandeliers.

Hotel Cipriani’s New Chef

Drawing on his international background and using the best of seasonal produce, Chef Riccardo is ready to elevate the concept of culinary experience through his creative talents, also venturing to Cipriani’s Cip’s Club, Porticciolo, and Bar Gabbiano, where visitors can enjoy the casual elegance of such a remarkable location.

Born in 1985 in Padua, Chef Canella comes to Hotel Cipriani on the strength of a series of experiences with some of the world’s greatest masters, such as Gualtiero Marchesi, Fabrizio Molteni, Massimiliano Alajmo, René Redzepi, and as Sous Chef at the acclaimed Noma in Copenhagen for seven years, marking an important moment in an epicurean revolution already underway in the Lagoon.

“Returning to Italy, tiptoeing into what is my homeland, in a landscape as magical and mysterious as Venice, is the only path I would have taken to test myself at this moment in my career,” remarked Canella. “I am happy and extremely fortunate to finally give voice to my way of cooking through this territory rich in stories and treasures to bring to light.”

Expressing his enthusiasm for working with the new chef, Marco Novella, Managing Director of the Cipriani, added “I am thrilled that a young, dynamic but already experienced chef like Riccardo is joining the team at Cipriani.
